John's recipe-test plate: hand-made potato gnocchi (flour, egg yolk, potato) in a Tuscan-style cream sauce with sun-blushed tomatoes and spinach, topped with pangrattato. The brief gave a basic recipe with no measurements or method - a test of cook's intuition. John, who knows pastry well, made gnocchi for only the second time.

Judge: "I quite like your gnocchi - they've got nice crisp edges, but your pangrattato is so lemony you've put pieces of lemon rind on the side, which would be lovely if we were all having a gin and tonic." 


Judge: "Your sauce is delicious - a great acidity that you need in a really good cream sauce. But we need to work on presentation."
