Signature challenge: 30 identical American-style cookies in two hours, any flavor, with an appropriate decorative finish, crisp to the bite with a chewy center. Clara and her fiance Kieran are having a giant tiramisu instead of a wedding cake, so she developed tiramisu cookies. Her coffee chocolate chip cookies, flavored with espresso powder, are topped with vanilla mascarpone and decorated with a 'just married' stencil. {Clara}: "Me and my fiance, Kieran, instead of having a normal wedding cake, we're going to have a giant tiramisu for everyone. He's obsessed with tiramisu, but making tiramisu takes a while, so I learned how to do tiramisu cookies and they are so nice." {Clara}: "I'm going to have a country festival at my wedding, with mechanical bulls." {Clara}: "That's eight, so I need to do four more batches." {Clara}: "Yeah, that's a good cookie." {Clara}: "I've got a chocolate chip base with coffee and then mascarpone cream with vanilla." {Clara}: "I almost got a handshake. For me personally, I would have put a little bit more coffee. But if Paul said it was fine, it's because it is fine and I respect him."
{Nigella Lawson}: "The cookie is quite thin. And the other thing is that there's so much topping. I'm hoping that hasn't dampened its texture." {Paul Hollywood}: "I would have given you a handshake for that." {Clara}: "Why are you not giving me one?" {Paul Hollywood}: "The cookie is spot on. Coffee level, perfect. The topping flavor, perfect. It's just too much of it." {Nigella Lawson}: "The cookie is wonderful. You've just slightly swamped it in the mascarpone." Later, in the judges' review, Paul said Clara had started well.
