Kerala Pepper Chicken Tacos

Main: Kerala-style pepper chicken served on Punjabi maize-flour flatbread (taco-style), topped with pickled cabbage and onion slaw, with a side of mildly spiced yogurt.
Mukul: "My main course, I'm cooking a very staple Punjabi maize-flour flatbread. But at the same time I want to keep my in-laws happy, so I'm making something from Kerala. It's called pepper-fry chicken. I'm going to serve it as bite-sized tacos with mildly spiced yogurt slaw."
Mukul: "So the inspiration for tacos obviously comes from Mexican tacos. So I can really call this dish 'from Punjab to Kerala via Mexico'."
Mukul: "Feeling all right now."
Mukul (presenting): "For the main course today I've made Kerala-style pepper chicken served on maize flour bread and have topped it with pickled cabbage and onion."
Mukul (after): "That was one of the most stressful things I've done ever in my life till date. But I'm pleased."
Grace (during cook): "Second course, Kerala-style chicken."
Anna (during cook): "I want to see lots and lots of black pepper inside that chicken. I want juicy spicy chicken."
Grace (during cook): "I want a soft fluffy maize taco."
Dhruv Baker: "Mukul's main. This is a kind of India meets Mexico, by way of taco with chicken."
Natalie Coleman: "The tacos, he can't cook them too long because otherwise he can end up burning them and they go bitter."
Dhruv Baker: "Kerala-style chicken. So curry leaf and black pepper. You'd expect that to deliver quite a punchy flavor profile."
Pookie Treadle: "Looking to have the nice texture of the slaw. Crunchy, full of flavour."
Dhruv Baker (tasting): "That pepper chicken is just outstanding. That heat element comes from pepper. It's got the curry leaf. It is genuinely exceptional."
Natalie Coleman (tasting): "The little flatbread that he's made is really delicious. It's not greasy. It's just perfect."
Pookie Treadle (tasting): "The red cabbage slaw, it just adds on the flavor to this already fantastic dish."
Anna (tasting): "His chicken tastes of black pepper, curry leaves, really vibrant."
Grace (tasting): "It is street food. It's absolute best."
Grace (summary): "I loved Mukul's Kerala chicken on the Indian tacos. It was moist. It's full of spice."
