Key lime pie-inspired vol-au-vents using lime crème pât, lime jam, and ginger biscuits. Sandro specifically chose these flavors hoping to earn a handshake from Paul Hollywood, knowing key lime pie is Paul's favorite dessert, which meant expectations would be sky high.
Paul Hollywood: 'They're all over the place, aren't they? You didn't ask for leaning time pizza. You've got a burnt biscuit sent on top of quite a dark, very low volume. The favor is amazing, but it needs to be much lighter. Volon should be nice and light and airy. It melts in the mouth.' Prue Leith: 'Pastry is overbaked, but think the favor is fantastic. I don't agree that the ginger biscuit's burnt. That's burnt. Do you think? Looks overbaked.'
