Rahul has planned a tray bake that's double layered. Rahul: "I did quite a lot of experiment with this recipe. I baked it like five or six different versions of it." Rahul often gets his best baking ideas whilst working out at his local leisure center in Rotherham. It's inspired a seventh version of his double lemon Jaconde sponge tray bake with Italian meringue, buttercream and now a drizzle made with the juice of four lemons and 25 cardamom pods. Rahul: "It does smell like disinfectant, so don't worry about that."
Paul: "Tough as old boots." Prue: "And the top is very sloppy. So you've got sloppy and tough."
