Lemon Blackberry Pavlova

Lemon and Blackberry Pavlova — first dish from Beverly, who entered the second half at zero points having held back deliberately to build components. Techniques: Foam (meringue), Gel, Powderizing (3 techniques). Beverly Kim: To plate my pavlova, I stuff it with blackberries, lemon gel, and chrysanthemum pastry cream, brown butter powder. Beverly: I made a lemon and blackberry pavlova. This dish earned her 99 points. Beverly: My first dish was a lot of effort for only 99 points. I want to be the last. She had spent the entire first half baking the meringue — it takes about two hours.
Wiley Dufresne: Beverly, your meringue is great. Unfortunately, I think that these berries are kind of big. Maybe you could have thrown them in liquid nitrogen and broken them up — got some flash freezing points there. Padma Lakshmi: Hopefully you can hustle and get a bunch of dishes going, because we want to see you get out of last place.
