[Technical challenge: mystery box, no recipe, two hours, judged blind. Finished 10th] Molly made a lemon sponge sandwich cake filled with lemon curd and raspberry puree, switching to American buttercream after her Swiss meringue buttercream failed. Molly: "I'm very nervous about this one." Molly: "I'm going essentially with a lemon drizzle cake, but I'm gonna do a sandwich cake. I'm gonna do a lemon curd and raspberry puree." Molly: "It looks like a sponge looks how it does at home." Molly: "I'm just going to check my cake. It might be done, but the texture doesn't seem quite right." Molly: "I think the cake had concertinaed. It had squished together." {Noel}: "Sure you never dropped it? Be honest." Molly: "No, I promise. I didn't drop it." Molly: "I'm trying to make a raspberry puree and Swiss meringue buttercream." Molly: "It smells like egg. I'm annoyed at myself because I wasn't whisking them. The eggs have started to cook, so I'm just going to have to pivot to American buttercream." Molly: "Oh, well, it's done now." Molly: "That was not my kind of challenge, so I'm not surprised it didn't go very well. I'll just have to try my best tomorrow."
[Blind judging] Paul: "So it's a lemon sponge, lemon curd and raspberry puree. Wow. That's tough." Nigella: "I think someone's had difficulty with the raising agent." Paul: "Flavor's not particularly good. It's definitely the sponges. Yeah, it's too dense." Paul (announcing 10th place): "It's very difficult to get some flavor from it." Judges' ranking: 10th.
