Signature challenge: 30 identical American-style cookies in two hours, any flavor, with an appropriate decorative finish, crisp to the bite with a chewy center. Star Baker from week one, Mo made lemon cookies with coconut and mango, inspired by lemon meringue pie, topped with lemon curd and blowtorched Swiss meringue. {Mo}: "So I'm doing a lemon meringue pie inspired cookie, and then I just thought, why not add coconut and mango to it?" Asked whether they come out chewy: {Mo}: "I feel like the mango also gives a nicer texture." {Paul Hollywood}: "You're not convincing me. You know that, don't you?" {Nigella Lawson}: "I don't know if he's convincing himself." Asked whether he eats biscuits: {Mo}: "No, not really. They're a really old people thing. If my friends said to me, do you want to come round? I'm going to be making some brandy snaps, I'd just look at them like, what are you on?" {Mo}: "So it's a lemon cookie with coconut and mango, topped with lemon curd and blowtorched Swiss meringue."
{Paul Hollywood}: "I like the look of it. Nice strong color on the base." {Nigella Lawson}: "Pretty, like a flower." [These two remarks directly precede Mo's presentation and follow Shannon's judging, so they may belong to Shannon instead.] {Nigella Lawson}: "I love the flavor. The crispness is good on the outside, but the interior is a bit cakey rather than chewy." {Nigella Lawson}: "I don't know that I need the mango, because it's a bit leathery." {Paul Hollywood}: "I agree with Nigella. I don't think the mango's needed at all. They don't look like an American classic. They look very different." Later, in the judges' review, Paul said Mo had started really badly in the Signature.
