Clara made a lemon sponge cake layered with an almond cream cheese frosting, from a recipe worked out without notes in the five-minute planning time.
{Clara}: "I'm going to put a little bit more lemon in, 'cause I don't want them to be like, I cannot taste it."
Clara: "It's a lemon sponge with almond cream cheese."
Clara: "We're on the cream cheese. I put three teaspoons of ground almond just to give it a little bit of texture."

Paul: "This is quite impressive, this naked cake, considering there was no recipe."
Nigella: "It's incredible in two hours."
Paul: "The flavor's good. The cream cheese is delicious. And overall, I think it's a very attractive cake. I just think the bake is slightly over on two of those sponges."
Nigella: "Each cake is actually quite small. It's very easy for it to go a teeny bit over."
Judges' ranking: 3rd. Paul named Clara afterward as one of the bakers who handled the challenge well.
