Lemongrass-Infused Coconut Panna Cotta with Mango Puree 


Jade's quarter-final dessert: a lemongrass-infused coconut panna cotta on a bed of mango puree with mango cubes, finished with lime zest and mint. A perfectly set, wobbly panna cotta is a notoriously difficult balance of gelatine.

Guest judge: "The panna cotta is cooked perfectly. It's got that lovely wobble." 


Guest judge: "That puree and the lime zest just adds that balance we need." 


Guest judge: "Every element is there for a reason. There's a confidence there that I admire so much." Judge: "The mango puree is beautiful, soft chunks of mango. I love the lime zest over the top." 


Judge: "I'd like to have had more lemongrass, but I'm not disappointed."
