Lime and chipotle picked crab paired with crab bonbons, elote-style charred corn, fresh tomato and cucumber salsa, finished with lime avocado crema, a tostada shard and a honey and chipotle dressing. 


Maddie: "The plan is a chipotle and lime picked crab with a crab bonbon, pepper, tomato and onion type salsa and a chipotle and lime and honey dressing, some elote style corn. It's like a Mexican street food snack." 


Maddie: "The first time I made this for my son because he is my only critic. I made the crab bonbons and he took a single bite out of it and said, mummy, this is great."

Jay Rayner: "Let's be honest, the word salad is hovering over this in very pronounced inverted commas. It's sort of a plate of olé, isn't it? That said, your chipotle, lime and honey sauce has depth and power. Your white crab meat's delicious. I like the salsa. It's not a salad, but it is a bunch of very lovely things on a plate." 


Anna: "Maddie, this eats very well. The elote corn — I could understand why your child cries out for you to make that. I love what you've done with elevated guacamole. It's so moreish. However, it's elevated Mexican ingredients, not a salad." 


Grace: "Crab can take a huge amount of spice and acidity. Your bonbons, they are under-seasoned and they are undercooked. I can't taste the chili in it and I can barely taste lime. I think you got very distracted with trying to do lots and lots of things. The real star of the show is quite lacking." Maddie was eliminated.
