David: "Essentially, I'm making a tequila slammer, more of a night out than a pre dessert."


For his pre dessert, David's making a nautical themed boozy lime and rum jelly.


David: "The inspiration for my pre dessert is James Lind, and he discovered the cure for scurvy. The Navy continued to give their sailors a ration of rum because it was the rum that preserved the citrus juice up until 1972. So I'm setting the jelly inside the lime. I'm doing, like, a hot, sour, crackle salt."

David fills lime skins with his lime and rum jelly mix, ready to set.


David makes his popping salt with chili salt, lime sherbet and crackle crystals.



"Oh, it's kind of salty. And sweet."
