Lime Rum Jelly

David: "Essentially, I'm making a tequila slammer, more of a night out than a pre dessert."
For his pre dessert, David's making a nautical themed boozy lime and rum jelly.
David: "The inspiration for my pre dessert is James Lind, and he discovered the cure for scurvy. The Navy continued to give their sailors a ration of rum because it was the rum that preserved the citrus juice up until 1972. So I'm setting the jelly inside the lime. I'm doing, like, a hot, sour, crackle salt."
