Limoncello Cream Croquembouche Bound in Caramel with a White Chocolate Sauce
Giorgio Locatelli: "You know that there is another croquembouche?"
Emily Steele: "I do."
{Emily Steele}: "I'm used to competition."
Giorgio Locatelli: "And what type of croquembouche are you going to cook us?"
Emily Steele: "Filling is going to be limoncello."
Giorgio Locatelli: "Where did the inspiration for a limoncello cream come from?"
Emily Steele: "Thought I'd make it exotic. And then I'm also just going to do a white chocolate dipping sauce, because I like chocolate."
Giorgio Locatelli: "And the combination, limoncello and chocolate?"
Emily Steele: "I think, you know what? If you love two things, you can make it work."
{Emily Steele}: "I think this sugar's hardening. You've got to work so quickly."
Emily Steele: "I'm feeling good. The filling, they liked. The white chocolate on the side, that didn't work, but I am glad it's over because I'm exhausted, to be honest."
Emily Steele: "If I went home... I feel like I've got more to give, and I feel like I'm taking all the feedback and I'm actually using it, and I'm listening."
Giorgio Locatelli: "It's fantastic. We have a battle of the croquembouches today. Croquembouche at dawn."
Grace Dent: "This feels like a very modern spin on a croquembouche. There's limoncello in there. That taste of being on a little bit of a boozy holiday with your friends during the summer. Can't beat it."
Giorgio Locatelli: "When I think about limoncello and I think about white chocolate, they're really two separate worlds. Is she gonna manage to bring it together? Let's hope so."
Grace Dent: "This is not the perfect croquembouche. It definitely has a little bit of a lean."
Giorgio Locatelli: "The profiteroles needed a few minutes more. But I'm really pleasantly surprised by the taste of the limoncello cream. It's really silky. It's not overpowering, to balance that limoncello in this cream so well. It's a very good job."
Grace Dent: "I am not entirely sold on limoncello and white chocolate. They're warring with each other."
Giorgio Locatelli: "The sugar on top as well, it would be too much, you know."
Grace Dent: "But I think your sugar work is very nice. And the little butterfly on the top is really making it for me."
Grace Dent: "Emily, your croquembouche was very prettily staged, albeit a little wonky. And I still question whether limoncello and white chocolate go together on the same dish."
Result: "Through to the next round (in the bottom three)."
