Lobster, Tomato and Champagne Risotto with a Champagne Beurre Blanc
Max Fosh: "Lobster risotto with a champagne beurre blanc. I have made this once before with my family when I had a particularly hard week at work. So, you know, just to celebrate the end of the week."
Giorgio Locatelli: "The end of the week, you go home and cook a risotto with lobster?"
Max Fosh: "Yes, of course."
Max Fosh: "Yes, chef. Look at all that lovely meat in there."
Max Fosh: "It needs to be al dente."
Max Fosh: "Look at that stocky goodness."
Max Fosh: "I thought that went really well up until the moment the judges tasted the food."
Max Fosh: "I don't know what I've done after this. This might be an early bath for me."
Max Fosh: "Lobster and champagne. Obviously not the winning combination. I guess my race has been run. Do you know what? I've had a good time.
"Semi-finalist of MasterChef. Yeah, that's gonna go in the Christmas card."
Giorgio Locatelli: "I would not accept a risotto that is overcooked."
Giorgio Locatelli: "I grew up on risotto. It's a difficult dish to prepare. Timing is so important."
Grace Dent: "A good risotto relies on an amazing stock. He's making it with lobster."
Giorgio Locatelli: "But he's adding cheese. Cheese with fish. Usually when you do a risotto with fish in it, you finish it with lemon. Let's hope it works very well."
Grace Dent: "I think it's really beautifully presented. It feels like a showstopper at a restaurant. Your lobster, I think, is cooked very nicely. Your beurre blanc, I think it's silky. I think it has got that lovely champagne acidity. But the risotto itself, I feel like you've put a bit too much tomato in there."
Giorgio Locatelli: "Presentation-wise, it's good, but this risotto is slightly overcooked, and it's not a lobster risotto. It ended up tasting like a tomato risotto with Parmesan. We wanted to taste the lobster."
Grace Dent: "Max, your presentation was impressive, but your risotto did lack flavor."
Giorgio Locatelli: "Plus the risotto was definitely overcooked."
Result: "Eliminated."
