In memory of his mother, Brad is recreating her famous loaf cake. A mandarin cream loaf topped with dark chocolate ganache and candied mandarin slices.


Brad: "My mom, she was just this elegant woman. She could do anything. She's why I'm in the tent. But for my mother, I wouldn't be here. I hope one day my sons speak as kindly about me as you speak about your mother. And I don't think they will!"

Brad: "I have a mandarin orange cream cake loaf. It has fresh mandarin oranges in it and an orange infused chocolate ganache."


Prue Leith: "It looks wonderful, even with a slight collapse of the topping."


Paul Hollywood: "It looks so baroque and extravagant. Nice balance. Chocolate's really strong and deep orange is good. I think you slightly over baked it. Flavour wise, though, amazing."
