Who made this dish?
Part of Mo's dessert trolley. Mousse cakes shaped like real mangoes, made with Alphonso mangoes, with a fresh fruit center and an almond biscuit base, sprayed with cocoa butter. Mo: "These are Alphonso mangoes. I think they just have really nice flavor compared to the other ones, which are quite bland. I'm doing a mango mousse. It's gonna be shaped like an actual mango." Mo (asked if this is his thing): "Kind of. Yeah." Mo: "Mango mousse. I'm gonna spray them with cocoa butter." Mo: "...a mango mousse..."
[Showstopper: a retro dessert trolley of at least three individually portioned desserts, eight of each, with at least one baked element. 4 hours 30 minutes.] Nigella: "The mango mousse that you've made look like a mango. Did you make this recipe up? I mean, this is genius." Paul: "You'd expect to see that in a five star hotel. As a dish, it's pretty faultless." Paul (judges' review): "Mo's mango mousse was beautiful." Nigella: "There is genius in that."
