Corwin: "So I made a rum maple tamarind glazed braised pork belly. It comes over the top of a steamed chawanmushi with sesame seeds and scallions."
Judges
"Yeah, it's a textural thing for me with Corwin's dish. Some of the pieces are a little dense or a little chewy."
"My chawanmushi was set really, really nicely. I see that yours was more like a soup. Is it more mushy than chow?"
"This is definitely more mushy, but I think he sort of over spiced it."
"So spicy, my mouth went numb. Execution was a little rough for him."
