Bailey: "I made a maple tart. It is a set maple custard. I have some whipped yogurt with a little maple in that as well, and then some maple brown butter flambéed pineapple."

"The maple was there, but doesn't necessarily come through as maple, per se. It just feels sweet."

(Laughs). "Right. Which is to say it's not there."
"The tart was under baked. All I taste is flour."
"I just don't think it's maple forward enough."
