Mapo Tofu Cone with Whipped Sesame Tofu and Mushroom Doubanjiang Ragu. 


A crisp pastry cone filled with a mushroom doubanjiang ragu, topped with whipped sesame tofu. Jun described it as authentic Asian flavors with a twist. He chopped mushrooms and peeled garlic while preparing the cone shell, layering the rich umami ragu with the smooth, creamy whipped tofu. The dish was designed to showcase his style of combining British ingredients with Asian flair.

Adam Handling ranked Jun's canape 1st out of four. Adam said that every time you took another bite, more flavor arrived, and the flavors were ones he was not used to, which excited him greatly. The other chefs noted a kick of spice at the end. Adam commented that Scotland was bringing its A game and it was just the snacks.
