Marble Potato Salad with Creme Fraiche, Potato Chip and Potato Foam
Sherry: "I have a potato salad, so I think I'm gonna finish it with these nice herbs. Fennel, a little hibiscus." Sherry: "It's gonna be a challenge to make potatoes the star. The composed dish needs to hit the crunchy, the soft, the tartness, all those flavor notes. I'm going like smoked fish. Jewish deli vibes." Sherry: "I took the marble potatoes from the farm, seasoned with butter and creme fraiche. I also did the potato chip, and then on the side, I took all the trimmings and made a little potato foam." Sherry: "I just wanted to highlight the potato as many different ways as I could. I steamed it, smoked it, and all the trimmings from my potato, I turned it into a potato broth."
Top three. {Sabrina}: "Chef Sherry's potato salad is cookout worthy." {Greg}: "I appreciate that. She used all the scraps in the sauce." {Judge}: "This did feel like a main. The potato combination didn't take away from the potato, which was still the star." {Judge}: "As a dish, knocked it out of your pot." {Tom}: "I think I can pull your dish out of a lineup now, and that's a good thing. You should have a sense of who you are when you're cooking, and it's definitely coming through." {Greg}: "That broth was probably my favorite thing to eat at this point."
