Marshmallow Sorbet with Lemon Granita and Lemon Verbena Oil (served martini-style) 


Jeffrey builds a cocktail-inspired pre-dessert. He whips a sorbet mixture from egg whites, corn flour, icing sugar and lemon juice and churns it into a marshmallow-textured sorbet. A lemon granita is made from lemon juice, sugar and water, frozen and fluffed with a fork into icy crystals. The marshmallow sorbet is scooped into a chilled martini glass, lightly torched to give a toasted-marshmallow crust, then topped with the lemon granita, lemon verbena and a drizzle of olive oil. 


Jeffrey: "I'm doing a Vespa martini with lemon verbena, olive oil and lemon granita." 


Jeffrey: "Just a marshmallow sorbet." 


Jeffrey: "I need to scoop and torch my ice cream."

VETERAN ROUND (Simon Rogan, blind tasting): Mark: "Incredible ice cream marshmallow." 


Jeffrey: "Love the texture." 


Simon: "Very nice. Got a bit of a [grain] on the tongue though, isn't it?" 


Andi: "Little residue a bit." 


Simon ranked it third of the three pre-desserts. 


Jeffrey was eliminated at the end of the cook and did not progress to the judges' round, so this pre-dessert received no further judging.
