Matcha Latte Cup Macarons

Latte cup shaped macarons filled with strawberry coulis and white chocolate matcha ganache, inspired by Rebecca's post-run reward of choice during half-marathon training with her sisters. 


Rebecca: "A couple months ago, my sisters and I, we all ran the Chicago half marathon. And during our training, how we would reward ourselves after our runs was we'd get a treat. And normally the treat was like different matcha lattes." 


Rebecca: "I'm making right now, the strawberry coulis. And then in the back is the cream and matcha for my matcha ganache. We need to get those in the fridge to set so that when you put them in between the two macarons, they don't sploot everywhere." 


Rebecca: "What you're looking for is that little crinkle feet down there. That means that they rose enough in the oven, and the inside's gonna be nice and chewy, which is what I wanted." 


Rebecca: "My fiance said they look like acorns, but they are matcha latte cups." Rebecca: "I really said, let's do the most detailed thing. Like, good Lord, what was I thinking?"

Paul: "There is a bit of a foot there, but they are uniform and they're decent color. I like the little strawberry you got in there as well." Prue: "I'm not sure I'd know that was a cup." Paul: "The strawberry inside, you get the white chocolate matcha. There's a hint of it, which I quite like. I'm not a big fan of matcha." Prue: "I think the flavors are fine. Perhaps a little too chewy."
