Matt (context): "Going a little bit of our Japanese route. So it's going to be more like a kind of like a soup, if you will, with the miso broth. We steep some of the [matsutake]."
Matt also began rice during the dumpling round — strategic prep that later forced a re-cook.
"As we've come to expect from Matt, the presentation was very elegant. All of these flavors really speak to Japan. But I felt like the dish was just a little timid."
Padma: "I do think one drop of soy sauce would have been miraculous on Matt's broth."
"We have seven kinds of soy sauce in the back."
Padma: "Oh, I know. I got the bill."
