Matty's Tiramisu Vertical Layer Cake
Matty said "When I hear some of the flavour combinations the other bakers are coming up with, I'm like, wow, how did they think of that? My cake is a take on a tiramisu. So it's a coffee cake with coffee mascarpone cream. "
The punchy coffee flavour in Matty's sponge and mascarpone filling was planned to be balanced with a light vanilla buttercream, but in the event, he couldn't get the butter to play nicely in a cold tent, and he ended up using mascarpone cream to ice the cake.
