Mexican Chicken and Chorizo Pie

As seen on TV
Which Show?
Who made this dish?
Showstopper challenge: one large, beautifully decorated free-form pie, sweet or savory, shaped and baked without tins. Time allowed: 3 hours 30 minutes.
Tom made a Mexican inspired free-form pie in a spiced hot water crust, filled with chicken and chorizo seasoned with chipotle and chili, shaped like a chicken and decorated in vibrant colors, served with a pico de gallo style onion dip.
Tom: "I love working with hot water crust. It will hold its shape better than other pastries."
Tom: "So we've got some chorizo in there. I'm making a Mexican inspired chicken pie."
Tom: "It's going to look like a chicken from one of my favorite films about chickens."
Tom: "The colors will just get even more vibrant after they've been in the oven."
Tom: "I need just a bit longer, just for the insurance."
Tom (presenting): "So I've made a Mexican chicken pie."
Tom (after judging): "Can't believe it. Got a handshake. They both loved it."
Tom (Star Baker): "I've won Star Baker three times. That is not something that I ever thought would actually happen."
Tom was named Star Baker for the third time.
Nigella: "Really fantastic. It looks a bit like a piece of Aztec art."
Paul: "I love the color. I love the bake on it as well."
Nigella: "And it's beautifully filled. I love the pastry because you've infused it with those flavors. It's like a really wonderfully fiery meat slice."
Paul: "It's the flavor combination, the moisture that you've got inside, the thinness of the pastry, the taste of the pastry. It's delicious. Spot on."
Paul gave Tom a handshake.
Nigella: "Delish."
Paul (deliberation): "Tom did a great job. He's got a lot of finesse. That pastry and showstopper was enough to get Star Baker. Really clever, neat, precise. The filling was beautiful."
