Ruth Clemens is making a minced beef pie. Ruth: "I could come in here today and make you a great fish pie. However, my kids wouldn't eat a fish pie at home. For the boys, this is exactly what I do. I never went to university like a lot of my friends did, so I always felt that I had something to prove in that way and I was sort of behind everybody else, so I think I got a bit downtrodden by that. Baking has been a real boost for me and this show. It gives me confidence in myself and I feel almost like that 18 year old girl again that, you know, that was full of confdence before the world knocked it out of it. I'm no less a person for not having gone to university and got a degree. I've got three lovely children and I think I've got a lot more than some other people." She's making an old fashioned minced beef pie with cheesy crust using shortcrust pastry. Mary Berry: "I'm a little disappoint. It is. It's just a really good family recipe. She hasn't challenged herself too much." Paul Hollywood expressed concern about the pastry thickness: "I think the pastry is too thick. I Think the base is too good and I can't see that cooking through because you will get a bit of growth. We could be looking at soggy bottom syndrome. Soggy bottom? I think we could be. Look slightly raw bottom as well. A raw bottom."

Paul Hollywood: "Look at that. Looks stunning. Doesn't it just? And your little crimper all the way around the outside. Lovely color, lovely appearance. It's cutting through nicely now. Doesn't that look a picture? Everything moist and just the right amount of sauce to the topping." 


Mary Berry: "You're so obsessed with damp pastry. You do not have a soggy bottom." Miranda: "Yay. No soggy bottom." Paul Hollywood: "We taste it. Yes, please. The flavor of that is fantastic." Mary Berry: "That is a very good example of a mince pie.
