Mini Persian Love Cakes

Kevin: "These are my Persian love cakes. We've got a large Perisan community in our church, so it's a tribute to their faith and the friendship."
Voice-Over: "Kevin's love cakes are full of Persian flavor with rose, Swiss meringue, buttercream sandwiched between layers of pistachio, almond and cardamom sponge."
Kevin: "The sponge is going to have blitzed pistachio nuts, but I'm not going to blitz them right down. I still want there to be a bit of texture and a bit of crunch."
Kevin: "The buttercream is flavored with rose. I know that rose can be a really overpowering flavor, so it's just a whisper."
Judging
Paul Hollywood: "They look very good. Pretty consistent."
Prue Leith: "The rose is perfect. The cake itself is a bit heavy."
Paul Hollywood: "You've got too much in there, which will pull all the moisture from the cake. So it's very, very dry."
