Miso Glazed Cod with Parsnip and Beet Puree, Yuzu and Sake Beurre Blanc and Chive Oil
Gordon Ramsay: "First of all, on the wheel of fusion, what country did you get?"
Basia: "We got Japan. I am making miso glazed cod with a beet and parsnip puree and with a yuzu beurre blanc and chive oil."
Gordon Ramsay: "It sounds simple. Do not go crazy on that puree. A nice little. Do not go crazy."
Basia: "Okay. Just a little bit."
Basia: "Look, it is leaking, man. I cannot wipe it. I am literally staring at my plate. It is like a crime scene. No lie. It is like a cesspool. And I am really worried that this could be my last cook."
Basia: "I am feeling upset right now. Tonight, I really wanted to save my team, and now here I am, I am at the bottom, and I could potentially go home tonight. I made a miso glazed cod with parsnip and beet puree, a yuzu and sake beurre blanc and chive oil."
Joe Bastianich: "Okay, Basia. So the question is, where is the water coming from? What do you have in here?"
Basia: "I have beets, parsnips."
Gordon Ramsay: "The beetroots take longer to cook than the parsnip. And so by the time the beetroots are cooked, the parsnips are overcooked and absorb too much water. So when they go on the plate, the water comes out of the puree. It is as simple as that."
Gordon Ramsay: "It is such a shame that the plate is full of all that liquid. I know the water is coming from the passing of the beetroots. Sadly, it looks a mess."
Gordon Ramsay: "It is clearly evident there is no editing here going on. You have got the puree, the yuzu beurre blanc, and then an oil on top of the beurre blanc just does not work. The puree is bland. The actual cod is cooked nicely, and that is the only saving grace."
Tiffany Derry: "This Japanese Polish fusion just is not working. I feel like you just had ingredients pulled from both cultures that really did not make sense. And so what we end up with on our palate is confusion."
Joe Bastianich: "When you have a dish in your mind, you have to know that you can get from here to there following the rules of cuisine. But you did not follow the rules to get there. And it shows."
Gordon Ramsay (in deliberation): "She just got confused again. I mean, just throwing those vegetables into the pot. But the fish was actually cooked properly."
Result: Bottom dish for team Europe. Safe from elimination.
