Mole Negro Pizza with Chicken Thighs, Black Bean Salsa and Crispy Chicken Skin


Cesar: "So we have mole negro chicken thighs, black bean salsa with crispy chicken skin." 


Kristen Kish: "What was your dough made out of?" 


Cesar: "Standard pizza dough, and I put a little bit of cocoa powder into it." 


Kristen Kish: "Cocoa powder. That's what's giving the color. Got it."



Judges:


"Let's talk about Cesar's pizza. "


"There's a good burn, like a flavorful burn. And I think this is the off putting, better burn than the cocoa powder for sure."


"That cocoa powder burns really easily. I actually like the mole sauce, but when I picked up the pizza, it felt like I was just holding up the sauce with this, like, really soft dough. "


"There's a flop there. I couldn't finish it." 


"Yeah, the crust for me just like turned me off.
