Molten Chocolate Tart with Oatmeal Crumble & Cranachan Cream

Luke approached the dish confidently, adding vanilla to his chocolate tart filling — a flavour enhancement not in Gary's original. His crumble was well composed with oats, coconut fat, hazelnuts and brown sugar. However, he initially planned to bake the tarts for 8 to 10 minutes, which Marcus immediately noted was far too long and would have destroyed the molten centre. More critically, Luke had conceptualised the dish as a set tart rather than a molten one — it took a pointed hint from Matt Tebbutt asking about the 'molten chocolate tart' to prompt him to rethink and pull the tarts from the oven in time. His cranachan contained liqueur, raspberries and heather honey, but he was heavy-handed with the liqueur, comparing the taste himself to cough syrup. He placed the oatmeal crumble on top of the tart rather than alongside it — a variation that Marcus actually praised, saying it cut through the richness of the chocolate. The tart was ultimately saved and delivered a molten centre.
