Brazilian Coconut Shrimp Stew with Rice
Horacio: "I am Horacio. Today I bring you one of the most traditional historical dishes in Brazil. This is moqueca with shrimp, rice, and a lot of peppers."
Gordon Ramsay: "Listen, visually, it looks a little bit old fashioned. The rice in the ring mold is very evident of the baby boomers right from the seventies."
Joe Bastianich: "Did you take the skin off the peppers?"
Horacio: "No."
Joe Bastianich: "It's so easy to remove the skin. It improves the flavor and the texture threefold."
Lidia Bastianich: "No, but the peppers, if you're going to take off the skin, you give up the crunchiness."
Joe Bastianich: "But who wants to eat crunchy peppers?"
Judge: "What seasoning did you use?"
Horacio: "Basil, thyme, coriander, cumin, and then salt and pepper."
Lidia Bastianch: "The flavor is good, and the shrimp is cooked to perfection."
Joe Bastianich: "The basic flavor is good, but there's a lot of details that are unattended to. For me, the peppers are incomplete. The parsley cut is a little bit amateurish."
Aaron Sanchez: "This is loaded with flavor. You chose a huge array of spices, but not one is dominating the other. So that leads me to believe that you know how to balance flavor.
Gordon Ramsay: "Listen, the shrimp are cooked beautifully. Rice is delicious. But I just need the spices to cook out so they're just not so raw. I think you're a very passionate home cook."
