Moroccan Spiced Chicken with Cauliflower Couscous and Pickled Radish and Cauliflower Purée 


Voice-over: "What this chef has presented you with is a moroccan spicy chicken breast, a roast cauliflower puree, cauliflower couscous, pickled watermelon radish, and a radish and fennel salad."


Things we learned during the cooking:

  • Michael Voltaggio wet his Moroccan spices and put the wet blend with the chicken into the pastry bag to speed up the marinating.

  • Michael used the fun word "quickle" (to quickly pickle)

  • Michael Voltaggio made noodle out of watermelon radishes 

"I have to say that this is what's going to make this cooking competition stand out. The food looks so freaking good. This is unbelievable. Lots went into presentation with striking colors, a lot of texture."


"Love the presentation. Clean colors pop the acid, and the radish adds a great element that just makes the dish lighter."


"I think it's got more flavor in the vegetables. Little underwhelmed with the flavor of the chicken."
