Flavors: citrus and spice. Moyin held back some of his custard. Ranked 8th. Moyin: "I have no clue what the key to a good bread and butter pudding is. This is out of my comfort zone." Moyin: "I'm not gonna pour everything. I don't think it needs everything." Moyin: "It should be big. This is big. I'm happy in the sense I wanted to make..." Moyin: "I did absolutely terrible. As soon as he said it was bone dry, I knew I was going to be last."
[Technical challenge set by Nigella, judged blind. Brief: enhance a classic bread and butter pudding with ingredients from the gingham pantry, without overwhelming it. Judges want a crisp golden top, smooth custard with a wobble, bread soaked rather than dry, and complementary additions.] Paul: "Should we start over here? Citrus and spice. Bit dry." Nigella: "Is it giving you a bit of agita?" Paul: "It makes me a little bit nervous." Nigella: "The custard is lacking." Paul: "I think over baking it will make it as dry as that." Paul (8th place): "It's just too dry. There's not enough custard, and it's slightly over baked."
