Ferdinando's grandmother's breakfast dish from 1970s Naples. A deep-fried sandwich built with white bread, scamorza (smoked mozzarella), regular mozzarella at the heart, smoked ham, potato and fried aubergine. The whole sandwich is breadcrumbed, deep-fried and then crowned with a rich Sicilian tomato and aubergine sauce. Ferdinando, an IT operations consultant from Naples, learned Neapolitan recipes from his Nonna Margarita from the age of seven. The judges worry the bread will soak too much oil in the deep fat fryer.

Anna: not sure if this is a MasterChef dish, but she would finish all of it; loves the crunch of the fried bread; the tomato sauce is sweet, pungent and well-balanced. 


John: as far as a toasted cheese sandwich goes, possibly one of the best he has ever had; loves the layers, and calls the aubergine and tomato sauce on the outside a stroke of genius. 


Ferdinando wins the first apron of the episode.
