Mussels in Escabeche with Beet and Squid Ink Marble Potato, Cauliflower, Mojo Rojo and Mojo Verde
{Rhoda}: "My dish is a take on mussels in escabeche. So I have beet powder and squid ink to kind of mimic a marble potato, cauliflower, a mojo rojo, and a mojo verde." During prep: "I'm gonna make mussels in escabeche and then play with my sauces, my colors as well. I cooked my mussels last night. That's in my escabeche." During service: when asked about her wow factor: "I actually don't know how to answer that question."
Jeff (Supperland co-owner): "The flavors didn't really come together, but she got two colors in there." Judges: "Those mussels are pretty overcooked. Sauce is broken. There's just a funk to the escabeche. Focus on the cauliflower - it's really weird. Cauliflower. It's not going down very well." Tom: "I'm glad that's over."
