Kristen Kish: "I love meat and potatoes, but when you have a silky palm puree and you have a tough, chewy piece of meat together, those two things never match up for me."
Gail Simmons: "The meat was really flavorful, except the fat hadn't been rendered in a way that made it easy to cut and easy to chew."
