Oil-Poached Aged Snapper with Aged Chorizo Sauce and Lemon Herbed Fragola


Joe Bastianich: "This dish had sophisticated techniques. Please come forward, Anna." 


Anna (to the camera) "I'm feeling very excited. I feel like I took some risks. I really hope I can get my generation the immunity pin and win the challenge." 


Anna (to the judges): "I made olive oil poached dry aged snapper with a chorizo sauce and lemon scented fragola."



Gordon Ramsay: "It's elegant. We said restaurant quality, and you've done that. You know, aged fish, tough to cook. Moisture has been extracted in the aging, and you've added moisture back by poaching it in olive oil. That's what I love. So can't wait to dig in. Beautiful. It's cooked. It's glistening. Listen, you nailed it. Just delicious." 


Aaron Sanchez: "The garnish really lifts that fish up. Great job." 


Joe Bastianich: "I think, for me, what the magic? This Sofrito, this little aged, roasted red pepper sauce. I just love that. Good job. Thank you. It's so cheffy in so many ways, and quite frankly, delicious."
