Beca made a traditional Welsh trifle featuring fresh orange jelly and ginger cake base. She emphasized that trifles are a staple in West Wales, typically served after Sunday roast. Having been brought up on trifles, she considered jelly essential to any proper trifle. Her version combined fresh oranges for the jelly with multiple types of ginger (ground, stem, and candied) in the cake base. She had been practicing at home for weeks, though her family was 'trifled out' from all the testing.

Paul Hollywood: "You were clever to think of doing the jelly in two different tins."


Mary Berry: "Jelly's lovely. Problem is, the custard's quite slack. So what you technically got is a ginger cake with a bit of jelly."
