Pan-Roasted Halibut with White Balsamic and Star Anise Sauce, Sauteed Morels Filled with Halibut Mousse, Asparagus with Black Garlic Puree and Sourdough Crumb, and Black Radish Rose with Halibut Ceviche


Kieran showcased his love of seasonal Scottish produce with pan-roasted halibut served on a white balsamic and star anise sauce with sauteed morels filled with halibut mousse, asparagus topped with black garlic puree and sourdough crumb, and a decorative black radish rose filled with halibut ceviche. 


{Kieran}: 'Scottish ingredients are one of the best in the world. Obviously I am a little bit biased, but definitely the seafood. It is because waters are so cold, everything takes a bit longer to grow, so there is more flavour there.' He cooked the halibut almost whole and carved it, using trimmings to make the mousse for stuffing the morels. He blanched black radish slices and rolled them into a rose shape to hold the ceviche. His grandmother inspired him to enter - she challenged him while watching MasterChef one evening. 


{Kieran}: 'One night she was like, you think you could do that? And I was like, I think so. And then she basically challenged me to go on it.' His main issue was the knife work when portioning the halibut - the knife was not sharp enough and he hacked at the fish, pulling it apart. The black radish ceviche lacked seasoning entirely. The asparagus, while nicely cooked, needed more attention. 


{Kieran}: 'I am feeling a little bit disappointed. But the dishes, I thought I were not good enough, so fair enough.'

{Monica}: 'The fish, you have got great colour on there. I love watching you cook the fish in the pan as a whole piece. But when you start to cut that down, that knife that goes through that fish needs to be razor sharp. You hacked at it, and it has pulled it apart. It is a shame.' 


{Marcus}: 'Those earthy morels, sweetness of the sauce, and the fish. Actually, those three elements are working quite nicely. But the black radish and the ceviche, I am not picking up any fish notes. There is zero seasoning in it. It is not bringing anything to this dish.' 


{Matt}: 'Asparagus is nicely cooked, and of course black garlic is lovely, but it just needs a bit of love, you know, a bit of seasoning. Maybe roll it in an emulsion of butter or something. I am a little bit underwhelmed.' 


Deliberation: {Marcus}: 'Kieran, I thought the morels, the fish, and the sauce were very good.' 


{Matt}: 'The fish was beautifully cooked, but hacked to pieces. Asparagus underwhelming and disappointing for him because beautiful ingredients cooked well but just did not deliver.' 


RESULT: Eliminated.
