Pan-Seared Cod with Jerusalem Artichoke Three Ways, Braised Salsify in Miso and Orange with Salsify Crumb, Asparagus with Wild Garlic, Herb Chive and Dill Puree, Orange Butter Sauce, and Cod Ceviche Tartlet with Ponzu and Yogurt
Keith cooked a pan-seared cod dish featuring Jerusalem artichokes prepared three ways - roasted, deep fried as crisps, and pureed - alongside braised salsify in miso and orange topped with salsify crumb, asparagus with wild garlic, a herb chive and dill puree, and an orange butter sauce. He also served a side tartlet of cod ceviche dressed in ponzu and yogurt to minimise wastage. {Keith}: 'Salsify reminds me of back home when my grandma used to farm cassava. So it is like similar, the shape of it.' Keith got into cooking by accident - he was working for an agency as a kitchen porter and was sent in place of a chef one day.
{Keith}: 'They sent me instead of a chef. And yeah, it is like, oh, you are going to have to cook today.' He enjoyed it and never looked back.
{Keith}: 'I tried my best to cook the food which I know, but could have been better. The dish did not come together well.'
{Matt}: 'Your fish cookery is brilliant. It is beautifully cooked. It is just melting away. This herb puree, I love the hints of the dill running through that. However, the seasoning is a little bit off in places.'
{Monica}: 'You have got this incredible autumnal element of your dish, the Jerusalem artichoke. And then you have got this very light orangey buttery sauce. It is not working with the Jerusalem artichoke for me. I love the purees. A lovely decoration. You have got a lovely piece of asparagus, but I would prefer a slightly different butter sauce.'
{Marcus}: 'The little tartlet. I like that yogurt top. It is fresh, it is light. You have got the ceviche in there which you have cured as well. It is good. But then you have got the salsify, that really strong crumb as well. It is kind of competing for some reason. It is just not gelling.'
Deliberation: {Monica}: 'Cod is a lovely, delicate flavoured fish, but there are a lot of earthy elements going into this dish. I question whether we need three different types of artichokes and a salsify as well. This is a dish about balance.'
{Marcus}: 'Overall the skills were very good, but the earthiness did not sit comfortably with that whole kind of freshness.'
{Matt}: 'Keith gave us his cod dish. Fish beautifully cooked, and I really liked the herby puree he had there.' {Monica}: 'It was sort of like a cross of two seasons coming together with salsify, artichokes, and an orange butter sauce.'
RESULT: Eliminated.
