Joyce: "My second course is my take on a school pudding I used to have — it's a pandan leaf sponge in a coconut milk custard." Joyce: "Pandan green. Yes, so my cake will be green." Pre-cook brief: pandan is a lovely woody, earthy, floral taste; combining it with a school-dinner sponge and coconut custard is something the judges had never seen done before.
Past Winner (Dr. Saliha Mahmood Ahmed): "I really love this dessert. The sponge was soft and so moist and pandan-y. And then the raspberries were really sharp." Past Winner (Jane Devonshire): "You can taste the lovely coconut in the custard. It's mellow and it's lovely. And the coconut on top finishes it off." Past Winner (Thomas Frank): "I have got a bit of an issue with this cake. There's not enough of it. So good." John Torode: "The sponge is light and fluffy. I like the tartness of the raspberry compote on top." Grace Dent: "There is a definite hint of that floral pandan." John Torode: "A little bit more sugar in the custard, and I think this would be a wonderful dish." Outcome: ADVANCED to the quarter-final.
