Paradise Found: Rum Cake with Caramelized Plantains, Passion Fruit Ice Cream & Passion Fruit Meringue
Chris's 'good' dessert, a personal love letter to his Jamaican family.
Chris: "For my good dessert, I'm making rum cake leaning into, like, my love of Jamaica and the Caribbean. My aunt is Jamaican. She introduced me to Caribbean food at a very young age. And my wife's Jamaican Chinese. It feels different when you're cooking a cuisine that you have, like, a personal attachment to. If I win this million dollars, first thing I'm doing is flying to Jamaica with my wife and daughters. Immediately."
Chris on the rum cake itself: "I've been making that for 10 years. It's my jam."
On presentation: "My good dessert is paradise found. I'm at my most happiest. I'm at the beach and specifically in Jamaica. So it's passion fruit ice cream, passion fruit meringue, and then you have caramelized plantains and rum cake."
Wylie Dufresne: "Your good dessert was really good. The different crunchy bits and the creamy bits and the caramelized bits — it was great."
Nina Métayer (guest): "I really love the cake. I really love the ice cream and the crumble, and I really love the plantain. But I miss the plantain in the other part of the dessert because I like all this preparation, but it look like three different desserts."
