Paradise Lost: Pandan Ice Cream with Anchovy Fish-Sauce Caramel & Black Sesame Shortbread Crumble
Chris's 'evil' dessert. Voted least likely to win, Chris kept the toughest forbidden ingredient — anchovies — for himself. Chris: "This challenge is hard because you're trying to incorporate flavor that most people would not associate with dessert. Everyone in this room thinks I'm absolutely out of my mind because I picked anchovies. But I really like my approach. I'm gonna purée fish sauce with anchovies, strain it out, add that into my caramel. The anchovies in a caramel — first time ever doing that."
On presentation: "For my evil dessert, I made Paradise Lost. The green pandan ice cream is supposed to represent the good, and then the anchovy fish sauce caramel underneath — it's kind of swallowing it up. And then I made a black sesame shortbread cookie with a little crumble underneath to represent fire and brimstone."
Wylie Dufresne: "We have all struggled with why on earth you picked anchovies. But 100% — you sold me. This caramel was really delicious."
Nina Métayer (guest): "I really love the burning on top. It's make me — in childhood, when I was cooking the marshmallow."
