Nicholas makes pannacotta poured into ice dishes and put in the fridge to set.
Nicholas: "It's inspired by Carmen Beckford, who is a Windrush generation Bristolian. She was the founder of their St. Paul's Carnival."
Nicholas: "So at the bottom, we've got a little coconut pannacotta, mango sorbet, which is made with a rum. I'm going to finish that with a vinegarette made with lime juice, some more of the rum, and I'm going to split that with fig leaf oil. Bit of a party in your mouth."
Simon Rogan: "It is refreshing. You wouldn't get filled up too much after that. Looks like the oil would be too much, but it's not. That is delicious."
