Toby: "At the moment I've got the pulp from 12 passion fruits. Doing passion fruit because I'm passionate about putting fruit in my bakes." 


Toby: "So I'm doing a passion fruit and white chocolate Basque cheesecake. I'm going to do a 50/50 split on the batter and I'm going to add white chocolate ganache to half and passion fruit jam to the other half." 


The cheesecake features tempered chocolate passion fruit shells on top with zigzag whipped white chocolate ganache and crispy sage leaves. 


Toby: "The cups are purple. Tempered white chocolate fruits need to be filled with white chocolate." 


Toby had significant challenges with his whipped ganache splitting multiple times."

Prue: "That is rich. Very rich but very delicious." 


Paul: "Needs more citrus. I'm getting it from the curd on the top obviously but inside I'm not tasting the citrus at all. It's just not punchy enough." 


Prue: ""Can I eat one of your little cups off the top?" 


Prue: "Those are lovely." 


Paul: "Lovely. That's the sort of thing you want inside. You want the cream and then the zest as well."
