Sherry's dessert option translates childhood peanut butter and jelly into a fine-dining course.
Sherry: "What if it's like a peanut butter and jelly panna cotta?" The base is a peanut butter panna cotta (a set Italian cream dessert) with a frosting-like richness. Around it she scatters compressed fruits (whole fruit run through a vacuum chamber to intensify flavour and colour) and dots of Cheerwine jelly.
Sherry: "We wanted to do elevated southern comfort, and I think that everybody loves PB and J... Peanuts are a big thing in Carolinas."
