Peach Almond and Ginger Trifle

Kimberley, a passionate salsa dancer, created a peach, almond and ginger trifle topped with homemade Amoretti biscuits. She made her own jelly from peach nectar and gelatine sheets, combining flavors she had in mind for some time. Working alongside others doing ginger-fruit combinations, her trifle also featured honeycomb elements that she was particularly excited about, calling them gorgeous and amazing when they turned out successfully.

 Mary Berry noted the layer definition was very good. Paul Hollywood loved the idea of the top garnish with little amaretti biscuits and honeycomb, saying he wouldn't have thought of it himself but felt it worked very well.
