Who made this dish?
Part of Moyin's "Lagos to London" trolley, fusing Nigerian flavors with traditional British desserts. He wore an outfit made in Nigeria to match the theme. Profiteroles filled with a groundnut (peanut) praline crème pâtissière. Moyin: "Making the peanut praline. Just piping the choux buns. And then as soon as the meringue comes out, these will be in the oven. It's all go, like everything at once." Moyin: "It's pretty much assembly at this point. All the fillings are made, the choux is made, but they're quite small." Moyin: "Groundnut pastry cream." Moyin: "...and peanut profiteroles."
[Showstopper: a retro dessert trolley of at least three individually portioned desserts, eight of each, with at least one baked element. 4 hours 30 minutes.] Paul: "The profiteroles are a bit flat. They should be much bigger. A little bit longer in the oven, maybe. That's an unusual one. Never had a peanut profiterole before. I do like the flavor, though." Nigella: "Yes, I do. And I think actually having texture makes it more exciting."
