Pear and Almond Tarte Tatin

PE teacher Stuart is splitting his spare time between practicing and training with his local rugby team. His tatin is pear and almond, using marzipan for the almond flavour. Stuart: "I'm using marzipan because it's quite an intense but nicely balanced almond flavour, so I'm putting that on top of the fruit and then the pastry on top of the marzipan." Stuart: "So hopefully it should be okay." At turnout: Stuart: "It kind of collapses slightly on this size, but yeah, looks good."
Before baking: Paul: "It could look very messy as it melts." Mary: "That marzipan is going to give a really good flavour; I often grate marzipan into a mixture of apples or pears, and I think it adds a lot to a tarte." After tasting: Paul: "It doesn't know what it is. The bake actually is all right. That marzipan with that is spectacular. The amount of liquid in this has made you have a very soggy bottom."
