Tristen: "Because I really want to make the mussel the star, I am going to just use zucchini and mussels as the base of this dish. I'm going to try to wrap the mussels in zucchini blossoms and tempura-fry them. Squash blossoms aren't something I use a lot, but they have the ability to house flavor really well."


Presenting to Judges

Tristen: "This is just a PEI mussel rolled in a zucchini flower and tempura-fried. Underneath is a mussel emulsion, and then there's just a little zucchini salad on top of it. Also dressed with a little bit of mussel juice."

"It was crispy, as advertised. The mussel was nice and juicy and plump. "


"Also, I love the fact that you took the mussel juice and turned it into an emulsion, a vinaigrette. Real good use of the product."
